I do have a copy of the Mazda workshop manual for the car, but it is somewhat silent as to what needs to get out to remove the parcel shelf.

The parcel shelf itself appears to be fastened with a number of plugs only, no srews.

I assume the rear seat has to be taken out (correct?), but what about the mouldings for the C-pillar, do they have to be removed?

parcel is simple

take the bottom bench out - there are two pluging leaver clips at the bottom
take the bench back out - on the bottom coners there is a bolt (12mm from memory) and lift to get it off the hooks
remove parcel clips
slightly lift the parcel and pull towards the front paying attention to the belts as parcel can hook them and not move

Yup Spot on.
Careful with those plastic clips (or wanna be screws with ultra flat heads on them! haha) They are stupidly fragile!
