Yeah UAC is better implemented in Win 7 when logged in as an admin, so I can see how disabling it wouldn't be necessary. Strange you got it to install without using compatibility mode unless that's something else that's changed with Win 7. I have a full-fledged copy of Win 7 now but haven't installed the EPC onto it (yet). I also mounted the ISO image rather than burned to disc. MagicDisc is also free and mounts ISO images in Windows. Mac users (including myself) will be happy to note that OSX has had native support for ISOs for years now but whatever.
